Observation: Employee did not have foodsafe certification onsite.
Corrective Action(s): Ensure there is one person with foodsafe certifcation onsite at all times. Employees without certification must obtain certification if they are going to be left onsite in operators absence.

Comments

Routine inspection.
Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
Coolers found at 4c or below and equipped with thermometers.
Freezers found at -18c.
Note: No hot holding units being used onsite.
Bleach water sanitizer at 100ppm concentration available for all food contact surfaces.
Overall facility is in sanitary condition.
Foods are located off the floor.
No pest activity noted during time of inspection.

The following requires operators attention:
1. see above noted violations
2. Ensure to thaw fish in small portions for temperature control. Do not take out large amounts of fish out of cooler. It is better to thaw fish in smaller quantities as needed for food preparation procedures.
