Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION - diary creamers were all found at 19-23C, including the water that had melted off the old ice bath.
Upon staff recognizing EHO, they immediately ran and threw fresh ice on the creamers.
Corrective Action(s): Creamers were all discarded at time of inspection.
As discussed, diary products must be kept cold at 4C or below. If this continues to be a recurring infraction, an automatic refrigeration system will be required.

Observation (CORRECTED DURING INSPECTION): At time of inspection, products in the hot holding case found to vary from 38C to 62C. Internal temperatures higher, showing improper air temperature and/or improper use of hot holding machine.
Corrective Action(s): Staff were asked to keep doors shut for 5-10min. Air temperature of machine went back up to 140F.
**You must immediately shut the doors after getting product from this machine.

**Remember staff must wash, rinse, sanitize, and air dry these utensils for EVERY wash.
General sanitation satisfactory, but more work needs to be done on continuous cleanup of high traffic areas such as door handles and fridge doors
Back office/ storage area near electrical panels requires cleaning and organizing
Temperature monitoring logs well maintained, up until today where no temperatures were taken at 6AM, 10AM, and 2PM.
