Observation (CORRECTED DURING INSPECTION): * Sanitizer was not set up or available for use at beginning of inspection and staff had not been using it at coffee bar either. Sanitizer is required to be set up and available for use during operation to ensure all areas of kitchen and bar are properly sanitized through out the day.
Corrective Action(s): * Ensure sanitizer available and ready to use during operational hours (eg. 200 ppm quaternary ammonium concentration). Operator set up sanitizer solution at 200 ppm for coffee bar and food prep area

Observation: * Some build up of grime/debris found on some shelving and under cooler/ice machine areas that requires cleaning and more frequent maintenance; ice machine was found to be dirty too with build of grime/debris/mold inside unit-- this unit requires regular cleaning/sanitizing (eg. weekly)
Corrective Action(s): * Ensure ALL areas properly cleaned and sanitized regularly to reduce build up of grime/debris (including equipment such as ice machine, etc)

Observation: * Some shelving in coffee bar areas have deteriorated and require upgrade/repair. This is still outstanding from a previous inspection.
Corrective Action(s): * Ensure all shelving, etc., in proper working order and free of deterioration

Comments

* Coffee and prebacked foods from Polly Fox Bakery (Abbotsford)
* Dishwasher final rinse was 74'C/165'F or hotter
* Cold-holding unit(2-door cooler at prep counter) ranged from 2'C-8'C and must be maintained at 4'C or colder
* Sanitizer was not available at beginning of inspection but operator corrected this once told to do so
* Freezer unit was -18'C or colder at back area; cooler at back area was 4'C or colder
* Hand washing sink soap dispenser was empty and staff were using dish soap to wash hands; ensure adequate soap available in dispenser
* Note: some cleaning and organization to be done; ice machine to be cleaned/sanitized regularly too
* Follow up inspection to be done next week
