-Minimal amounts of food stored on-site at the time of inspection.
-Upright cooler was at 4C.
-Upright freezer was at -18C.
-Serving area refrigerator/freezer was at 1C/-18C.
-Hot holding table available for service of foods. Ensure foods are cooked/reheated to 74C and hot holding unit is above 60C, prior to using for storage of foods.
-Ice wand available in freezer to rapidly cool hot potentially hazardous foods.
-High temperature dishwasher had a final rinse of 72C on the dish surface (minimum of 71C required for proper sanitizing).
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Sink in the serving area has a leak.
-Bleach sanitizer spray bottles labelled and tested at 100ppm.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
*A container of mouldy feta cheese was found in the upright cooler. Ensure stock is inspected and rotated on a routine basis to prevent food from becoming mouldy.
