Observation (CORRECTED DURING INSPECTION): 1. One bottle located in the front area had no detectable sanitizer. Bottle was unlabeled; however, staff stated bottle was used for the purposes of sanitizing.
2. Small amount of food debris observed under sharpening guard of deli slicer (between blade and blade housing).
Corrective Action(s): Bottle was emptied, refilled, and tested at 200 ppm quats. Ensure sanitizer is always available at the correct concentration for effective sanitizing of food contact surfaces (e.g. 200 ppm quaternary ammonium compounds / quats). Verify concentration with test strips.
Deli slicer disassembled, cleaned, and sanitized at time of inspection. Ensure deli slicer is properly taken apart, washed, rinsed, and sanitized after each use or if it is used throughout the day, then every four hours or less. Improperly cleaned and sanitized deli slicers may potentially result in cross contamination. Recommendation: Post manufacturer's directions for cleaning and sanitizing of deli slicer on wall above deli slicer as a reference for staff.

Corrective Action(s): Labeled at time of inspection. Ensure ALL chemicals, cleansers, and similar agents are properly labeled to identify contents to prevent accidental mixing and/or misuse.
