Comments

-Hand washing stations are equipped with hot/cold running water, liquid soap and paper towel in dispensers
-Temp of all coolers and freezers are satisfactory <4 oC and < -18 joC
-Temp all hot holding units >60 oC
-Oil is ok in deep fryers
-Ice machine is clean and ice scoop are maintained in sanitary manner
-Quats sanitizer level in third sink 200 ppm
-Quats sanitizer in buckets are all > 200 ppm
-Good personal hygiene noted by staff (hair control, disposable gloves and changing frequently...)
-Temp log sheet is on site and up to date
-No expired products noted
-Foods are properly covered in coolers and freezers
-Foods are labelled
-Food safe certified staff on duty.


*** Discussed not to store utensils (scrapers ) for cleaning food contact surfaces in a sanitizer bucket- wash - rinse and sanitize using the 3 comp sink.
