Observation (CORRECTED DURING INSPECTION): Knife blade cover appear to be damaged and dirty; the knife was held at the bar for lemon/lime cutting.
Corrective Action(s): Required operator to discard the cover, clean and sanitize the knife then place it in clean compartment. Operator discarded the cover at the time of inspection
