Observation: Some (less than 10) mouse droppings noted on the floor behind the dish machine.
Corrective Action(s): Sweep, clean and sanitize all mouse droppings noted behind the dish machine and anywhere else visible. Monitor this area. Alert your pest control company of the droppings (external pest control company comes in twice a month as per Manager) and continue working with them to mititgate and eliminate pest issues at the facility.

Observation: Mop bucket noted with dirty mop water. Not in-use at the time of inspection.
Corrective Action(s): Discard the dirty mop water after use. Dirty mop water must be immediately discarded when finished moping to avoid having stagnant water at the facility where it can attract pests.

Routine inspection conducted today:
Handwash station accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units at 4.0C or below.
All freezer units at -18.0C or below.
Bleach sanitizer spray bottle available. 200 PPM chlorine residual detected.
High temperature dish machine was functioning properly. Registering at 81.0C at the rinse temperature gauge and highest temperature attained at the plate level was 74.6C.
Drain plugs available for the 2-compartment sink.
In-use utensils were noted in a sanitary condition and in good repair. As per Manager, in-use utensils are changed out several times a day - excellent.
General cleanliness satisfactory.
