-Prep. cooler near the cooking area was at or below 4 degrees C on the right hand side, top portion, and drawer inserts (measured between 2.2 to 3.7 degrees C) around 3 PM.
-Temperature records were being maintained on an 'AM/PM" shift. Please ensure the temperature record sheet is double checked or audited by the Person in Charge/Operator/Head Chef at least once per month.
-Affected area with the rodent droppings was cleaned to remove the rodent droppings.
