Observation (CORRECTED DURING INSPECTION): Dishwasher dispensed less than 50 ppm chlorine in rinse cycle, detected at dish surface.
Corrective Action(s): Sanitizer line was primed at time of inspection, 100 ppm chlorine detected at dish surface after rinse cycle.
Ensure to use test strips daily.

Observation: 1) Floors need to be re-sealed. Paint is chipping off and concrete is exposed.
2) No food or food-related items to be stored upstairs (in mezzanine) - this area has not been approved for food storage.

2) Move all dry storage items back downstairs to approved food storage/food prep area.

- Equipment maintained in sanitary conditions
- Food storage practices satisfactory
- Proper thawing of food observed (in walk-in cooler)
- Dry ingredients stored in pest-proof containers
- General sanitation is satisfactory
