Corrective Action(s): The shelf used for storing dips and take out boxes (beside the order monitor) has an accummulation of dust/debris build up. Clean the shelf. Clean under dry storage shelves as discussed.

GENERAL COMMENTS:
Coolers are below 4 degC
Freezers are below -18 degC
Dishwasher rinse temperature was 72 degC at plate level.
Sauces are date stamped except for the ones noted above.
Both hand sinks are fully equipped.
Exhaust hood had been serviced.
200ppm Quats sanitizer is available for use. Buckets are time stamped. ENSURE SOLUTIONS ARE REFRESHED AS NEEDED AND NEW TIME STAMPS POSTED ON THE BUCKETS.
Temperature log is being maintained on the computer.
A pest control company is on contract. Last two service reports reviewed. No major concerns noted.
Door on hot holding unit does latch when closed fully. No hot holding was being done at the time of the inspection.
