Observation (CORRECTED DURING INSPECTION): 1. Chicken observed to be stored at room temperature on preparation table next to handwashing station.
Staff was originally working on chicken but moved to assist with lunch rush.
**Corrected during inspection** Staff resumed work on chicken by end of inspection. Educate staff on importance of moving products back to cooler when not actively working on potentially hazardous products.

Observation (CORRECTED DURING INSPECTION): 1. Towel observed to be soaked in water used to wipe table and placed in cupboard in front area. Bacteria will grow in damp, warm and soiled towel.
**Corrected during inspection** Towel removed when identified. Towel should be clean, dry or soaking in sanitizer solution.

2. Sanitizer measured to be ~50ppm at start of inspection.
**Corrected during inspection** Sanitizer freshly made in 3 compartment sink measured 200ppm. Please make a fresh batch every 4 hours.

Observation (CORRECTED DURING INSPECTION): Issue with front handwashing station; all staff observed to have issue with pulling paper towels with wet hands.
**Corrected during inspection** Educate staff on getting paper towels before washing hands; hands become dirty/contaminated by paper towel dispenser after washing hands.

Observation: 1. Raw meat observed to be stored next to vegetables.
2. Personal items and chemicals stored on, beside, and above spices on dry storage wire shelf.
3. Bucket of potatoes (peeled) stored in front of handwashing station (back). Difficult to wash hands and reach for paper towels without contaminating bucket.
**Corrected during inspection** Bucket removed when identified.

Observation: 1. 3 compartment sink spray nozzle observed to be dripping water when not in use.
2. 3 compartment sink "Sanitize" basin (nearest mechanical dishwasher) observed to be leaking.

Observation: Flat top grill observed to be sitting outside of range hood canopy.
Corrective Action(s): Operator suggested removing stove elements (mainly used for humus) and moving flat top grill so it is completely under the canopy. Steam and grease damage observed on wall (paint drooping, oil droplets forming on canope edge.

Revert to approved plans, or rearrange cooking equipment so all items are under canopy. Forward a copy of the revised floor plans to your district inspector for approval.
