- Countertop prep cooler measured 4C (insert with raw uncracked eggs)
- Countertop prep cooler appears to be affected by the three crepe making machines
- Owner is re-organizing space to have more separation between the crepe making machines and prep unit
- Probe thermometer purchased to monitor temperature of foods within unit
- Reminder that foods that are above 4C for more than 2 hours must be discarded
- Ensure that temperature are logged twice daily
- Unit is emptied daily (foods are stored in upright cooler)
