Observation (CORRECTED DURING INSPECTION): No sanitizer solution available for use. Operator had prepared 200ppm chlorine solution in a labelled spray bottle.
Corrective Action(s): Ensure to have the sanitizer solution prepared at all times. Use the solution to sanitize all food prep surfaces before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.

Observation: Few uncovered foods observed in walk-in cooler. Operator was advised to cover all foods in the cooler.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot//cold running water.
-Coolers operating below required temperature of 4'C; Freezer operating below required temperature of -18'C.
-Temperature monitoring in place but logging has stopped since December 2019.
-High temperature dishwasher achieved 74.5'C at the plate level after final rinse.
-Ventilation canopy hood serviced and maintained.
-Dry storage area satisfactory.
-Traps in place. No evidence of pest activity observed.

General sanitation of the facility EXCELLENT throughout.
Operator had to leave at the end of the inspection for personal appointment. Please contact the health inspector for any questions or concerns.
