Observation: Floors require deep cleaning in some areas. Many display/sliding glass door refrigerator door seals have accumulation of food debris, and undercounter cooler door handles were noted to be greasy.
Corrective Action(s): 1) Ensure deep cleaning of floors occurs at last once a week.
2) Clean and sanitize insides and seals of all coolers at least once a week.
3) Clean and sanitize cooler door handles and all high-touch surfaces throughout each day.

Comments

- Hand sink in deli department was properly supplied in hot and cold running water, liquid soap, and paper towels. *Note: paper towel dispenser in deli department is being replaced.
- High-temperature dishwasher reached above 71C at the dish surface during rinse cycle.
- Hot-held soups and other food items at self-serve station were maintained at 60C or hotter. Hot-held rotisserie chicken maintained at above 60C.
- Food heated in deli department to at least 74C before placing in hot-holding units. Good.
- Quats sanitizer solution available at 200 ppm in spray bottles and at three-compartment sink. Test strips available for use.
- Deli walk-in cooler, all display coolers, and undercounter coolers measured at 4C or colder.
- Deli slicer is thoroughly cleaned and sanitized every 2 hours.
- Temperature logs available for review and up to date.
- Food storage practices satisfactory.
- General sanitation satisfactory, however see violation code 306 above.
- Pest control in place. No signs of pest activity noted in this department at time of inspection.
