Observation: 4 buckets of soup found cooling improperly in the walk in cooler (full 5 gallon pails, no cooling stick)
Correction: You must cool soup from 60C to 4C within 4 hours. Use cooling sticks every time. Cooling sticks were stored away, not in the freezer and were not being used. Next time your soup will be discarded if it is found to be cooled unsafely.
