Sinks in the meat-cutting area provide with soap and paper towels in dispensers.
Chlorine tabs available for sanitizing equipment (1 tab for 100 ppm, etc) - dishwashing sinks
Liquid bleach available for sanitizing counter tops, etc. (100 ppm or greater).
Upright cooler for storing retail sausages, jerky, pepperoni and smoked bacon was below 4 deg C. Thermometer available in the cooler
Walk-in coolers were below 4 deg C (-1 to 2 deg C) - for game meat storage.
Walk-in freezers were below -18 deg C.
Dry storage area - spices were stored on shelves off the floor.
Pest control monitoring being done on-site.
Garbage disposal done frequently (contracted company).
Premises area on septic but on City water.

Improvements have been made in the facility:
**Hand sink installed in the sausage-making area.
-Install wall-mounted soap and paper towel dispensers at the hand sink.
For the meantime, provide liquid soap and paper towels nearby the sink.
**Upgrades done in the walk-in coolers and freezers (new flooring & lighting)
**Front cutting area - new LED lighting with covers and ceiling installed.
**Front door replaced and at front entrance door now has concrete pad
**New two compartment sink installed in the cutting area (previously just one sink)
