Handsinks equipped with hot/cold running water, liquid soap, and paper towels
Walk in cooler (Main kitchen): 2.9 deg C
Walk in freezer: -15 deg C
All other coolers at 4 deg C or less
Chest freezer by dishwasher at -17 deg C
Hot holding at 60 deg C or greater
Chemical dishwasher in kitchen achieved 50 ppm chlorine residual at rinse cycle
Ice scoop stored outside ice box inside a separate container
Quat sanitizer in spray bottles in bar area and in kitchen at 200 ppm Quats

Note: operator is still working on COVID safety plan as dine in has not yet opened. Ensure to keep a copy of your plan on site at all times. Discussed with operator regarding the reduced seating capacity of 50% and ensuring that all tables/seats are a minimum of 2 meters from each other. Also discussed with operator regarding the removal of bar seating or updating the COVID safety plan to include how all of the items behind the bar (open ice box, fountain drink dispensers, drink knozzles, etc) will be protected from contamination.
