Met with owner and the following items have been discussed: -each food items in the hot holding unit need to have their own serving spoon - all serving spoon should be cleaned after serving not left at the room temperature and be reused - all wiping clothes to be stored in bleach solution ( not only at the end of the day ) Hot holding temperature measured at 62C - Daily temperature logs are up to date - owners have been completed the FS refresher course
