Observation (CORRECTED DURING INSPECTION): Staff observed not washing hands prior to handling food.
Paper towel dispenser not working in the front sink and roll on counter was empty.
Corrective Action(s): Discussed with staff on when to wash hands.
Paper towel roll was placed on counter near hand sink in the interim. Ensure the dispenser is fixed immediately.

Observation: Rodent droppings observed in staff washroom, corner across the coffee station, and in the dishwashing pit.
Corrective Action(s): Remove all droppings immediately and sanitize these areas. Establishment should be inspected daily for droppings.
All food contact surfaces are to be sanitized prior to use.

Observation: Back entrance door that leads into the washroom hallway and then to the dining area is kept wide open. Staff indicated if door is closed, the door locks and poses an accessibility issue.
The middle door between the back entrance and the dining area remains closed but has a gap.
Corrective Action(s): Install door sweep on the middle door so that there is no longer a gap between the bottom of the door and the threshold.

Routine Inspection
All coolers at 4 C or below.
All freezers at -18 C or below.
**Reminder: food is to be kept covered and protected from contamination in coolers and freezers.
Low temperature dishwasher registered at 100 ppm for chlorine during final rinse cycle.
Quats sanitizer in spray bottle and from dispenser registered at 200 ppm.
**Ensure a spray bottle is kept in back of house. All bottles must be labelled.
Fish thawing under cold running water good.
**Discussed location of food prep sink vs hand sink. Use the compartment closest to the soap and paper towel dispenser as the designated hand sink.
**Clean up hard to reach areas (behind and underneath shelves).
**Remove old cardboard lining the shelves.
