Observation: 1. Moisture and grime accumulation in mop bucket/ dirty linens storage area appears to be attracting fruit flies.
2. Gap at back kitchen door may allow potential pest entrance.
Corrective Action(s): 1. Maintain a higher level of sanitation in back mop bucket/ dirty linens storage area. More frequent collection of dirty linens and beverage recyclables may be required to minimize fruit fly attraction.

2. Install a doorsweep at back kitchen door.

Observation: - Thorough cleaning required in the following areas:
- Heavy grease and food debris accumulation under and behind grill.
- Grease accumulation on exhaust ventilation hood filters.
- Dirt and garbage accumulation under bar counter beside glasswasher (behind chemical containers).
- Grime and moisture accumulation in mop/ dirty linens storage area and under 2-compartment sink.
Corrective Action(s): - Thoroughly clean the above noted areas and all other surfaces and hard to reach areas.

Observation: - Grill grease tray does not close properly thus it does not adequately catch grease causing grease to drip and accumulate on/ under/ behind grill.
- Grill front cover does not close properly and is held together with tape.
Corrective Action(s): - Repair and/ or replace grease catch tray.
- Repair and/ or replace grill front cover. The use of tape to hold equipment together is not acceptable. All surfaces must be durable, smooth, non-absorbent, and easily cleanable.

- Bar Glasswasher: 12.5 ppm iodine residual **Bar employees are not verifying daily that unit is operating properly. Use iodine test paper and kit to verify that there is 12.5 to 25 ppm iodine residual. Obtain an iodine test kit.**
- Low Temperature Chemical Sanitizing Dishwasher: 50 ppm chlorine residual. Chlorine test papers available to verify sanitizer concentration. Daily records appear maintained and up-to-date. Checks are completed on most days.
- FOODSAFE Level 1 requirements are in compliance.
