Observation (CORRECTED DURING INSPECTION): Internal temperature of dairy milk in the one door undercounter cooler between 10-12 C. Staff stated this cooler was stocked the night before.
Corrective Action(s): Milk was discarded by staff. Always keep cold food at 4C/40F or colder. The temperature of the coolers should be checked routinely and the temperature should be written on a temperature log to help ensure equipment is maintaining proper temperatures.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No food grade sanitizer available for storing wiping cloths in. Staff using "Allora Plus" All Purpose Cleaner for sanitizing cafe tables. Directions for use states this product must have a contact time of 10 minutes and that all food contact surfaces require a rinse with potable water.
Corrective Action(s): Use food grade sanitizer that does has a short contact time and does not require a rinse. Operator brought bleach on site and then a chlorine solution with 1/2 tsp of bleach per litre of water was made. Store wiping clothes that are in use in this solution. Do not leave wet wiping cloths lying around the counters.

Observation: Cooler with 1 door observed to be at 14 C.
Cooler with 2 doors observed to be at 11 C.
Display cooler observed at to be at 10 C.
Corrective Action(s): Service coolers so that the coolers are able to hold an ambient air temperature of 4 C or below. Refrigeration units must always be at 4 C or below.
Do not use these coolers to store potentially hazardous foods until the coolers are serviced and able to maintain a temperature of 4 C or below. Storing unopened shelf stable products or non potentially hazardous foods in these coolers is okay. Dairy milk in the two door cooler was relocated to upright cooler. Only keep one jug of each milk out at a time and use within 2 hours. Sandwiches in the display cooler were re-located to the upright cooler in storage.
Correct immediately.

Routine Inspection
-High temperature dishwasher registered at 71 C during the final rinse - good.
-Two compartment sink equipped with hot/cold running water, liquid soap and paper towel.
**Dump sink sometimes used for hand washing but has no paper towel - keep paper towel supply nearby this sink as well as staff are using it for hand washing.
-Upright storage cooler at 1 C.
-Upright storage freezer at - 16 C.
-Temperature logs not maintained. Ensure temperatures are checked daily and recorded.
**Clean and sanitize ice machine routinely to prevent mildew growth.
