-cook indicates the pot was left on counter for an hour then just transferred to line cooler

For a pot this size it must be in an ice bath to cool from 60 deg C to 20 deg C within 2 hours -then place in the line cooler: 20 deg C to 4 deg C within 4 hours:

Reviewed Cooling Methods from Food Safety Plan with operator -all your cooks MUST be trained for proper cooling methods of foods ensure to review these materials with them

Note: operator is catering foods to BCIT for wraps and curry chicken dishes -coolers with ice are used for safe food transport -okay
