Follow-up inspection to routine on March 13, 2019 (RPT#: JMAA-BA8SGZ). The following observations were noted:
Operator has started to maintain cooling logs - ensure that these are accurately maintained and that all items are cooled from 60C to 20C within 2 hours, and from 20C to 4C within 4 hours
Saag was recently cooked and was at an internal temperature of 80C. Saag will be cooled with an ice wand afterwards, then placed in the walk-in cooler
Ventilation canopy has now been cleaned. Spilt oil and debris underneath cook line have been removed
Wood panelling above the grease trap has now been removed
Light cover has now been replaced - good
New freezer has been purchased and placed outside of the storage room
Chest freezer has been removed and replaced with a stainless steel prep table

If you wish to store items to the right of the dishpit, it is suggested that you use a material that is smooth, easily cleanable, and impervious to moisture such as stainless steel
