Dishwasher is not used (due to long run-cycle); dishes are washed in 3-compartment sink and sanitized with quats at 200 ppm. Adequate space for air-drying.
All coolers operating at </=4 C; freezers operating at </= -18C *Please defrost ice build-up in stand-up freezer located next to dishwasher
Temperature logs maintained daily for coolers/freezers
Ice cream dipper well not used (issues and spillage); two scoops on-site, operator washes and sanitizes them with each use. *Note: If premise found to be too busy and scoops cannot be adequately washed and sanitized to keep up with demand, the dipper well must be turned on.
