Routine Inspection: Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water. Prep and stand-up cooler maintained below 4 degrees Celsius. Freezer maintained below -18 degrees Celsius. All food items organized on shelves and in cold holding units. All food protected from contamination: - Food stored at least 6 inches off the floor. - Food covered with a food-grade cover. QUAT sanitizer in bucket = 200 ppm. Wiping cloth stored in sanitizer solution - good. 3-compartment sink available for manual warewashing - proper set-up at the time of inspection. QUAT sanitizer for manual warewashing = 200 ppm. Ice machine clean. Ice scoop stored in designated container. No signs of any pest activity at the time of inspection. General cleanliness and maintenance excellent.
