Note:
1. A new food display cooler is installed at the front by cashier. A small oven is also noted on top of undercounter prep cooler to reheat food items. OK
2. The facility is proposing to add hot dog roller machine by front cashier area (staff dispensing instead of self serve by customer in current practice). The hot dog machine will be placed next to the oven. No objection to that.
3. Updated food safety plan has been submitted for review. Changes are required. A separate email will be sent on changes.
4. Back storage room requires to be re-organized - bigger buckets of chemicals are placed right in front of the dishwashing sinks, making it difficult to use the sinks for proper dishwashing.
5. A couple big pots is noted at the back storage room on shelving rack. As this facility only has a 3-compartment domestic sinks, facility should only use equipment that can be fully submerged in sinks. Remove big pots from facility. Facility can also consider switching to commercial sinks.
