Observation (CORRECTED DURING INSPECTION): Handwash sink basin beside the freezer unit was blocked with an equipment at the start of the inspection.
Corrective Action(s): **Issue corrected during the inspection** Equipment was removed from this handwash station. Do not store anything in the basin of a dedicated handwash sink.

Observation: Multiple containers of food (sliced cucumbers, tomatoes, onion, green peppers) were stored uncovered in the walk-in cooler.
Corrective Action(s): Cover all food in the walk-in unit. Any food stored for a prolong period in a refrigeration unit must be stored protected with a lid/ plastic wrap.

Observation: 1. Grease buildup noted on the floor below the grill, in the oven, on the wall by the cookline and fumehood.
2. Dust buildup noted on the rack above the dish machine - holding cleaned utensils and food contact items.
Corrective Action(s): 1. Clean and sanitize all areas noted with grease buildup, especially areas that are not going to be professionally cleaned. As per operator, someone is coming next Monday to clean the hood.
2. Clean and sanitize the rack noted above the dish machine to ensure cleaned utensils are stored cleaned after washing.

Observation: Hot water tap unable to be turned on in the handwash sink beside the upright freezer.
Corrective Action(s): Facility does have immediate access to another sink (2-compartment sink) that they are using for handwashing. Facility may use this 2-compartment sink for handwashing until the actual handwash station is repaired. As per operator, a plumber is coming this Saturday to address the sink.

Routine inspection conducted today:
Handwash stations (except the unit beside the upright freezer), including washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
Proper storage hierarchy observed in the cooler units.
Bleach sanitizer spray bottle available. 200 PPM chlorine residual detected in the spray bottle.
High temperature dish machine was able to reach 71C at the plate level (184F at the gauge level) during the rinse cycle.
Cutting boards noted in excellent condition and are sanitary.
Secondary cook step observed on grill as meat comes off cone.
No signs of pest activities noted during the inspection.
Operator's FoodSafe certificate verified and posted.

Note: Operator is proposing to remove a 2-compartment sink beside the dish machine. Please submit an updated floor plan to reflect what the area will look like after the renovation for approval. Once approved then you may start the renovation.
