Observation (CORRECTED DURING INSPECTION):
1) Dishwasher did not dispense any measurable chlorine sanitizer in final rinse cycle. Sanitizer bucket empty.
2) Ice machine has mildew build up
Corrective Action(s):
1) Sanitizer bucket changed, dishwasher primed. Dishwasher dispensed 50ppm chlorine at final rinse cycle.
2) Ice machine to be cleaned right after closing.

Observation: Raw egg flat stored on top of cooked ingredients in prep cooler.

General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm quats in spray bottle
- peroxide used for high touch surfaces - please check with Health Canada link below to ensure it is approved for use for COVID-19
- general sanitation satisfactory

** Some fruit fly activity. Pest control has installed physical traps. Ensure any spills are cleaned and to cover all fruits to reduce amount of fruit flies. Continue to monitor. If problem persists, consult with your pest control company **
