Overall sanitation is satisfactory Hand washing station stocked with liquid soap and paper towel Hot and cold running water available at all sinks Three compartment sink used for manual ware washing Bleach sanitizer available; detected 100 ppm of residual chlorine All coolers at 4 C or lower; all freezers at -18 C or lower No hot holding units at the time of inspection No sign of pests noted at the time of inspection *Operator had freshly made pizza at the front counter at room temperature. When inquired operator indicated that these will be here for an hour, then transferred to a cooler in a box. Recommended to use a hot holding unit instead at 60 C. Time control must be done with a timer to ensure that 1 hour time limit is met*
