Observation (CORRECTED DURING INSPECTION): Wiping rag sanitizer containers 50 - 100 ppm Quaternary Ammonia.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Refresh all sanitizer containers with new sanitizer solution.

Observation: Pest control report indicates cleaning and pest proofing actions requiring attention since December 29, 2021.

Pest control has not provided service since previous inspection.
Corrective Action(s): Action items identified by previous pest control service are all to be corrected.

Pest control service to be retained to conduct a pest proofing audit of premise to identify and correct all potential rodent entry points throughout the premise as needed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mouse droppings observed in the following locations: on floor under rinse sink next to dishwasher, in dry storage hallway on floor around gas cylinders, inside milk crates storing extra tiles, produce storage shelf, food preparation area by dishwasher on floor under shelving and on shelving support metalwork, on floor under office work counter, in kitchen on floor under right wall food warmer, on floor and inside cabinet of dessert station, and inside large buffet counter under fried chicken and soup warmers.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
