Observation: Accumulation of debris observed on the dough mixer. On the top insert hole of mixer, grease was leaking out from the hole.
Corrective Action(s): Clean and sanitize the dough mixer. Ensure grease is cleaned up to prevent it from leaking into the dough. Correct by: Immediately.

Observation (CORRECTED DURING INSPECTION): Dim sum area and back kitchen did not have food sanitizer available for use.
Corrective Action(s): Staff mixed 200 ppm bleach sanitizer at the aforementioned areas. Clean and sanitize all food contact surfaces at those locations.

Observation (CORRECTED DURING INSPECTION): 1. Hand washing station at the dim sum area was blocked by plates.
2. Staff washroom hand washing station was missing paper towels.
Corrective Action(s): 1. Staff removed plates blocking the hand washing station. Ensure hand washing station is always easily accessible by staff.
2. Replace the paper towel in the staff washroom.

Observation: 1. Growth of mold observed on the side walls inside the walk-in cooler.
2. Food and sauces not covered while stored inside the coolers and dry storage area.
3. Roasted ducked stored under raw meat and sea food inside the walk-in cooler. Frozen raw meats stored on top of ready to eat food inside the walk-in freezer.
Corrective Action(s): 1. Clean and sanitize the side walls to remove any mold. Follow your sanitation plan for regular cleaning schedule. Correct by: Apr 12, 2022.
2. Cover food with food-grade barriers while storing to protect them from contamination. Correct by: today.
3. Ready to eat food must be stored on top / separate from raw meats to prevent meat juice from contaminating ready to eat food. Organize the storage immediately. Correct by: today.
