Observation (CORRECTED DURING INSPECTION): Containers of sauces for dining in was left uncovered on the countertop. Staff personal items (cell phone, bags) were found in the back food prep area. Glass of water found in the prep area.
Corrective Action(s): Provide cover for these items. Keep all staff personal belongings in the lockers in the back area. Provide beverage drink containers (i.e. sports bottle) that have lid and straw for staff to drink in the back area.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Milk containers (4L jugs) used for storing sauces made at the kitchen located in down town Abby.
Corrective Action(s): Do not re-use milk containers for storing sauces. Milk containers are designed to be recycled and not re-used. Store sauce in washable food grade container and labelled properly.

Observation: Hand wash stations do not have proper paper towel dispensers.
Corrective Action(s): Rolls of paper towels are just sitting on the counter tops. Install a proper paper towel holder or dispenser at each hand wash stations.

Hand sinks provided with liquid soap and paper towels.
Sanitizer (bleach) measured 100 ppm.
Walk-in cooler was below 4 deg C.
Walk-in freezer was at -18 deg C.
Prep line coolers were at or below 4 deg C.
Hot holding for rice was at or above 60 deg C..
High temp dishwasher reached 71-72 deg C at plate surface.
Other items to address by operator:
1. Provide more shelving units in the walk-in freezer and walk-in cooler keep food items off the floor
2. Label all food items in the walk-in cooler (preparation day and shelf life)
3. Keep copies of kitchen staff's Food Safe level 1 certification
4. Maintain temperature log for all temperatures (cold-holding, hot holding, etc.)
5. Provide a container for storing dirty wiping cloths
6. Designate an area to store mop and mop bucket
7. Make provisions for pest control monitoring
