209 - Food not protected from contamination [s. 12(a)]
Observation: There were 3 boxes of cabbage, 2 boxes of radishes, a large bag of onions, and several pails of dry foods stored outside the restaurant in the back hallway.
Corrective Action(s): This is a repeat offense. This infraction has been coded more than once but continues to be an issue. All foods and equipment MUST be stored inside the restaurant. It is obvious that storage space is an issue for the restaurant. You need to look at ways to fix this. Violation ticket issued.

304 - Premises not free of pests [s. 26(a)]
Observation: There were 4 dead mice on a glue trap under the counter in the front prep area (area that has a cooler with pull-out drawers).
Corrective Action(s): Dispose off the mice and clean the area. Place more traps and monitor activity. Ensure that a pest contol company is on contract. Keep service reports on-site.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Bottled water is being frozen and being used as a "cooling wand" to cool down soups, broths. This is not acceptable. The plastic used for botted water is not strong enough to withstand the high temperatures.
Corrective Action(s): Buy proper cooling wands which are intended for this purpose. DO NOT STORE WANDS AMONGST THE RAW MEATS IN THE COOLER. Wrap the wand, then store it in the freezer away from raw meats.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation: Every manager needs to have Foodsafe Level 1 certification and in their absence, there has to be at least one staff member who is certified.
Corrective Action(s): The manager on-site did not have FS certifcation. Get the managers certified by April 30, 2020.
