Observation: Fridge number 5 not properly cold holding at 5 to 8c as compressor fins observed with ice build up.
Corrective Action(s): Staff stated cooler was loaded this morning. All perishables were relocated to adjacent upright glass cooler.
Contact technician and do not use until technicain veriifies it is capable of cold holding at <4c.

Observation (CORRECTED DURING INSPECTION): Dishwasher initially dispensing 0ppm in final rinse as chlorine level is container was very low and was drawing in air..
Corrective Action(s): Once new container was put in place and dishwasher primed a final rinse of approx 75ppm chlorine was detected.
Ensure staff switch out the chlorine container when there is about 5 cm remaining. Pour the 5 cm into the new container once it has drawn down so as not to waste product.

Premises is placed on elevated inspections due to repeat critical violations.
Monitoring logs being maintained.
Tempura batter observed in an ice bath.
Tags observed on all hoses for the dishwasher
Timers in place at deep fryers which will alarm once the cooking cycle has been completed for the chicken balls and the teriyaki chicken
*Ensure wiping rags when not in use are kept fully submerged in the sanitizer and the sanitizer is changed every 2 hours, Currently premises is using chlorine. Recommend using quat sanitizer as this does not impart any odor.
