√ Food up off floor ≥6”, good stock rotation noted, all product tagged/labeled for quick and accurate identification and traceability
√ Esan sanitizer available and tested regularly
√ Product tested for pH, Aw and common pathogens regularly by third party
√ Environmental sampling and water testing done regularly for Listeria **recommend doing samples on taps that are used the least as well as in ice machine
√ Three compartment sink fully stocked
√ Equipment appears to be in good working order and in sanitary condition
√ General sanitation and maintenance is very good
√ No signs of pest infestation noted
