Observation (CORRECTED DURING INSPECTION): Facility has two cloth towels with a loop to hang on the wall for wiping hands. Screw was observed in the wall next to the paper towel dispenser to hang the towel. Staff member observed hiding the towels behind the hot water tank at the time of inspection.
Corrective Action(s): Do not use reusable towels to wipe hands. Cloth towels can result in recontamination and cross contamination of hands. Remove hand wiping towels from the facility along with the screw to hang the towels. Review proper handwashing practices. Screw was removed from the wall at the time of inspection.

Observation: 1) Ready-to-eat foods in the front display cooler were stored in direct contact with trays of raw meats.
2) Box of meat was stored on the floor in the walk-in cooler.
Corrective Action(s): 1) Ensure foods are stored in a sanitary manner and ready-to-eat foods are stored separately from raw foods.
2) Store foods off the ground and protected from potential contamination. Box of meat was moved off the floor at the time of inspection.

Observation: Bleach spray bottle was unlabelled.
Corrective Action(s): Ensure all chemicals are labelled to prevent accident mixing and/or misuse. Once labels fall off, ensure containers are relabelled.

Comments

-Cooked chicken is made in the afternoon, when an individual who has FoodSafe Level 1 is in the facility.
-Walk-in cooler was at 3C.
-Front display coolers were at 4C (three coolers).
-Chest freezer was at -20C.
-Upright freezer was at -18C.
-Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plug available.
-Front handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach spray bottle tested at 200ppm.
-Meat saw, grinder, cutting table sanitized every 2 hours.
-General sanitation satisfactory at the time of inspection.
-No signs of pests noted at the time of inspection. Facility is serviced by professional pest control operator on a monthly basis.
-Washroom clean and well maintained.
