General: - handwashing station stocked with soap, paper towels and hot and cold running water - good hand hygiene observed - sanitizer measured 200ppm quats*** - dishwasher dispensed 50ppm chlorine at final rinse cycle - blenders are handwashed - ensure three compartment sink method is used - scoops stored in clean, dry containers; one scoop for every ingredient available - ensure scoops are washed, rinsed and sanitized at least every four hours (manager states that it is done more frequently) - ice machine is sanitary - no expired foods upon random audit *** Sanitizer should be dispensed at manufacturer's recommended temperature range (18-24C) Temperature: - retail cooler: 4C - display freezer: -18C - under counter cooler: 4C - upright freezer (back): -14C - upright cooler (back): 3C
