Observation (CORRECTED DURING INSPECTION): The potato slicer has been replaced with a new one that doesn't have as many small spaces to clean.
Corrective Action(s): After using the slicer, clean/rinse the debris off so that the food doesn't get dried and caked on at the end of the night.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some general cleaning required.
Corrective Action(s): Clean the outside of the cooler/freezer doors in the kitchen; clean the sauce spill inside the walk-in cooler by the door.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Walk-in cooler temperature is at 8 degC.
2) The lid on one of the breading bins is cracked and broken.
Corrective Action(s): 1) As discussed, if temperature does not drop to 4 degC or below in the next half an hour, call a repairman.
2) Replace the cracked lid on the breading bin.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: There are several holes on the wall by the sink in the kitchen where potato slicers have been removed and reattached.
Corrective Action(s): Seal all holes in the wall.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Assistant Mgr did not have Foodsafe level 1 certification. The staff on duty couldn't prove that she had taken the course.
Corrective Action(s): There has to be at least one staff on-site at all times that has FS level 1 certification. All the managers and assistant managers should be certified.
