-Temperature records were not up to date. Ensure that they are recorded daily. Also, ensure that the dishwasher is checked every day.
All coolers were < 4 C.
All freezers were < -18 C.
No evidence of pests. Pest control reports reviewed during the inspection.
Quats sanitizer measured at 200 ppm.
Hand sink supplied with hot and cold water, soap and paper towels.
The dishwasher final rinse temperature reached 74 C at the plate level.
Cook is FoodSafe certified.
General sanitation was satisfactory.
