Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Rice cooker lid still had rice flakes; bottom of stainless steel pot had food debris despite cleaning. Ice machine appeared to have black mould all over. Knife used to cut raw meat was wiped with towel but still had carrot on the blade. Knife is then placed next to cut cabbage. )

Paper towel dispenser installed in kitchen handsink and not obstructing handwashing; paper towels available in all handwashing stations
Magnetic strip in place for knives, reminded operator that all knives should be cleaned before placing them back on the magnetic strip
Under counter cooler readjusted to 4C
Proper cooling of beef teriyaki noted
Cleaning completed on kitchen floors and ice machine but operator is hiring professional to do deep cleaning of wall in cooking line as he could not access it
Thermometer obtained for dishwasher; demonstrated to operator how to test dishwasher
Temperature logs in place but no temperatures taken since Dec 1, please commence immediately as discussed
