Comments

-Ensure that food scraps are cleaned from underneath the two-compartment sink.
All coolers were < 4 C.
Freezers were < -18 C.
Hot held items were > 60 C.
No evidence of pests. Pest control reports are on site.
Quats sanitizer solution was at 200 ppm.
The dishwasher had 50 ppm chlorine. Records are being kept.
