Observation: A small amount of debris was present inside the ice machine.
Corrective Action(s): Drain the ice and clean and sanitize the interior surface in accordance with manufacturer's instructions to maintain in a clean condition; Correct today.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were observed on the floor below the dry storage shelving unit across the 3-compartment sink, floor behind the dry storage bins near the fire extinguisher, and shelving unit corner across from the dry storage bins.
Corrective Action(s): Clean and sanitize all affected areas to remove the rodent droppings and monitor for signs of recent pest activity; Correct by April 15, 2022. Continue with integrated pest control measures: Having a pest control company provide a service to the traps, sealing all potential entry points, keeping the food premises in a clean condition, keeping food covered between use, sanitizing prep. surfaces prior to and after each use, and taking out garbage on a regular basis. Staff mentioned that Orkin is scheduled provide a service soon sometime next week.

Observation: Prep. cooler containing small amounts of cheese, lettuce, sliced tomatoes, and sauces was at 9 degrees C at the time of inspection. Food inside it was being time-tracked with cold potentially hazardous food products discarded every 4 hours as per staff.
Corrective Action(s): Staff mentioned a technician is scheduled to re-service/repair the under-the-counter cooler tomorrow. Ensure the under-the-counter cooler maintains a temperature at or below 4 degrees C; Correct by April 14, 2022. Continue time-tracking controls for the cold potentially hazardous food products in it for the interim.

Handsink near the deep fryer and handsinks in the washrooms were supplied with liquid soap, hot and cold running water, and single-use paper towels and/or air dryers.
3-compartment sink was supplied with hot and cold running water and drain plugs were available.
100 ppm chlorine sanitizer was available in the third compartment sink unit and sanitizer pail.
Walk-in-cooler was at or below 4 degrees C.
Walk-in-freezer was at or below -18 degrees C.
Under-the-counter freezer temperature was satisfactory.
Raw meat was stored separately from ready to eat food inside the walk-in-cooler.
Food was covered in refrigeration units.
Hot-held food (e.g. chicken, mashed potatoes, gravy, and rice) was at or above 60 degrees C.
