-Met with operator to discuss correction requirements noted during routine inspection on June 8th, 2022:
-Sanitation in the production area is much-improved
-Please schedule a time in the near future (ie. 1-2 months) to refinish the degraded/worn areas of the concrete floor
-Discussed usage of food-grade sanitizers on food contact surfaces. The Clorox wipes are not suitable as a no-rinse sanitizing method (requires rinsing of surface prior to contacting food). Chlorine bleach and water (mixed at 100-200ppm concentration) may be used as a no-rinse food-grade sanitizer on food contact surfaces (use regular, unscented bleach only).
-Provided reference sign for manual warewashing using 2-compartment sink. Ensure service and production staff have access to hand-washing sinks while handling food.
-New director completed application form at time of inspection
-Operator is registered to take Foodsafe course on Thursday. Please email a copy of your interim certificate after completion of the course.
