Observation (CORRECTED DURING INSPECTION): * Back receiving door was open and this can lead to pest entrance; back receiving door is for deliveries only and must be kept closed at all times to reduce risk of pest entrance
Corrective Action(s): * Ensure back door kept closed and used only for deliveries to reduce risk of pest entrance

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: * Build up of debris/grime found on storage shelf racks and under some food equipment (sandwich prep table and cooking line, etc) that requires more frequent cleaning, etc.; ice machine also requires more frequent deep cleaning to remove build up of grime/debris
Corrective Action(s): * Ensure all areas including equipment shelving properly cleaned/sanitized regularly to remove build up of grime/debris and maitnain these areas in sanitary condition(including under cooking line and sandwich prep table, etc); for ice machine, ensure that it is properly cleaned and sanitized regularly to maintain sanitary condition

Observation (CORRECTED DURING INSPECTION): * Ice machine at pop machine was found to be broken and ice scoop was being stored in container with ice used for customer for self service; Staff removed this ice container and scoop as this is not a sanitary means of dispensing ice for customer drinks; Also, container was found cracked and taped up-- which is not usable-- operator removed it immediately
Corrective Action(s): * Ensure ice machine repaired at pop machine; in the interim customers will need to request ice from main ice machine area for their drinks; ensure all containers in proper working order and free of cracks/deterioration

* Dishwasher final rinse initially was 68'C and after several full cycles was 71'C; Operator contacted dishwasher repair person and adjusted booster (higher) and after several more full cycles it was found to be at 74'C/165'F or hotter internally; ensure dishwasher maintains rinse cycle 74'C/165'F(optimal) internally and continue to document daily
* Cold-holding units were 4'C/40'F or colder
* Freezers were -18'C or colder
* Hot-holding of soup was found to be at 60'C/140'F or hotter
* Monitoring records were available for temperatures/cleaning; organizational improvements noted; Food Safety Plans were updated for menu
* Sanitizer was available and at 200 ppm quaternary ammonium concentration
* Food was covered and dated in storage areas
* Note: ensure ice machine is cleaned and sanitized regularly(eg. monthly) to remove build up and maintain sanitary condition
* Follow up inspection in next few weeks
