Observation (CORRECTED DURING INSPECTION): Chili hot holding 51 C, hot holding unit water reservoir dry.
Corrective Action(s): Product discarded.
To prevent microbial growth cooked potentially hazardous foods must be kept hot at 60 C or warmer.
Hot holding unit is to be filled with water and monitored to ensure proper function.

Observation: Front entrance swing doors - clearance between doors, floor and adjoining millwork allow for pests to enter premise unrestricted.
Corrective Action(s): Front entrance swing doors are to be replaced or modified to exclude the entry of pests. To effectively pest proof entrance, swing doors cannot have a gap between floor or adjacent door / wall greater than 1 cm in size. Correction Date: November 11, 2019.

Observation: Mouse dropping observed under pop syrup shelving and next to grease trap.
Walk-in cooler shelving have build-up of food debris.
Dry storage room floor has build-up of debris.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
