Observation (CORRECTED DURING INSPECTION): Observed one large container of sauce at 24.3C internal temperature. Operator stated this product had been completed at 10am.
Corrective Action(s): If the sauce was completed at 10am: According to the proper cooling procedure, by 12pm the sauce should have been at 20C or less. Then by 4pm, sauce should be at 4C or less

Sauce discarded at time of inspection by operator. Discussed proper cooling method, operator has an ice wand on-site. Be sure to follow the proper cooling procedure and check the temperature with a probe thermometer throughout the process. Improper cooling is one of the top ten reasons for food borne illness.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Observed product called "Pure Gold" multi purpose cleaner be used as a sanitizer. This product is not classified as a "no-rinse sanitizer" which is clearly stated on the label.
Corrective Action(s): Operator discontinued use of product immediately and made a 100ppm Cl solution in a spray bottle. Educated staff on using bleach as well. (100ppm Cl = 1 tsp bleach for 1 L water).

Ensue back door remains closed, was propped half way open at time of inspection.
Dishwasher tested at roughly 50ppm Cl, call ecolab to increase chlorine injection to ensure minimum 50ppm Cl.
