Observation (CORRECTED DURING INSPECTION): Food items are being stored in "opened" metal containers. Front prep service line - air loss noted due to missing inserts.
Corrective Action(s): Ensure all food items are being stored in covered, food grade containers. Do not store food items in opened, metal containers. Prep line - inserts are to be utilized to fully cover opening in order to prevent air loss.

- Temperature Control: No concerns noted. Temperature monitoring is being conducted. Temperature logs are to be kept on site for review.
- Manual Dishwashing/wiping cloth storage: (4 Step - Quat Sanitizer) Drain stops noted on site.
- Use 200ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily
- Use test strips to measure the concentration of sanitizer. Test strips are noted on site
- Food Storage: Refer to Violation Notes.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Structurally: No bare wood permitted in food service establishments. (ie: remove shelf - paint/seal)
- Sanitation: Prep lines are to be kept clean and organized. Store all items in designated areas.
- Pest Control: Monitoring is required to be conducted. No signs noted this date.
- Garbage, Recycling and Composting Disposal: All items are required to be stored in covered, rodent proof containers.
