Observation (CORRECTED DURING INSPECTION): Meat display cooler running at 8C. Supervisor claims that it is on a defrost cycle - however, temperature did not go down even after the inspection.
Corrective Action(s): Chicken and marinated meats were all placed in the walk-in cooler at 3C at time of inspection. It is your responsibility to routinely check and LOG temperatures for all of your coolers. If a cooler is above 4C and does not go back down after the defrost cycle, you must empty the cooler and wait until it reaches 4C or less before stocking again.

Observation (CORRECTED DURING INSPECTION): Display cooler at 8C at beginning of inspection. Upon further investigation, it was found that a staff member had accidentally unplugged the cooler in the morning. Display cooler went back down to 4C at end of inspection.
Corrective Action(s): Chicken and marinated meats were re-stocked in the display cooler after it reached 4C. Measures have been taken to prevent accidental unplugging of the power cord.

Follow-up inspection conducted. Walk-in display cooler unit now at 2C and was serviced by a technician. Thank you. Ensure that you maintain temperature logs every day so that you can verify that your equipment is working properly.

NOTE ON MEAT DISPLAY COOLER: Never unplug your display cooler. Measures have been taken to prevent accidental unplugging of the cooler. A follow-up will be conducted at a later time to assess temperature control and temperature logging practices for all of your coolers. You must maintain a temperature log daily.
