Observation: Damaged dry wall in the chemical storage room due to water splatter from the dishwasher/three compartment sink.
Corrective Action(s): Replace the damaged dry wall in the area noted above. Keep this area dry. All floors and walls must be kept dry and free of moisture build up to prevent mold growth and/or attracting pests.

Comments

- General sanitation is satisfactory.
- All handwashing stations (production room, behind the dishwasher) supplied with hot/cold running water, soap, and paper towels. Ensure to have wastebins close by.
- Low temperature dishwasher dispensed 100ppm chlorine sanitizer at 34C at the plate's level.
- Surface sanitizer available in spray bottles at 200ppm QUAT concentration.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity. Certified pest control company inspects the facility on a monthly basis. Latest pest control reports reviewed (July 3rd, 2018, Aug 2nd, 2018) and pests are isolated in the exterior portion of the facility. Follow the recommendations by the pest control company.
